You have a few options in terms of where you would like to stay. Hostels may be a good idea for people travelling alone and wanting to meet like minded people but they aren't too cheap for what you get. Roughly $30 a night will get you a bunk bed in a 6 dorm room, although this may seem quite cheap it isn't. For around $40 a night you can have your own private room in a house if you book though airbnb. What's great is it's free to add a guest, so if your a couple like us it works out cheaper. Once you have yourself a set of wheels camping can be a good option and their is plenty of camp sites scattered about. 'DOC' camp sites can be good as they have different classes of sites ranging from the very basic to pretty decent. Prices for a well maintained site with washing facilities and kitchen can be anywhere between $18 - $30 each per night and low end sites with just a toilet and cold running water can be as low as $7 each per night. When settling in a town for something a bit more long term it is a good idea to get hunting for a house share. Depending on where you are staying the typical cost per week all in will be $160 - $200 for one person or $240 - $300 for a couple.  The best way to find room shares is by the internet. The website 'Trade Me' is the kiwi version of gumtree and you can find pretty much anything on there, wether it's cars for sale, rooms for rent or even jobs. Facebook is also a great way of finding good deals, there tends to be a rooms for rent facebook page for most towns. Lastly you can try the local supermarket notice board, there is always rooms for rent on there.
